Sweet Plantain Tortillas (Gluten-Free, Soft & Nourishing)


Ingredients:
• 2 ripe plantains (yellow skin with some dark spots)
• 2 to 3 tablespoons almond flour (optional, depending on texture)
• Pinch of salt

Optional flour alternatives:
If you don’t have almond flour, you may substitute with:
• Coconut flour (use less, as it absorbs more moisture)
• Gluten-free oat flour
• Brown rice flour

Instructions:
1. Peel the ripe plantains and cut them into chunks.
2. Steam or boil the plantains until they are very soft.
3. Mash the cooked plantains while still warm until smooth. Add a pinch of salt.
4. Gradually mix in the almond flour. Only add flour if the mixture is too wet or sticky. The dough should be soft, flexible, and easy to handle.
5. Divide the dough into portions. Place each portion between two sheets of parchment paper and press using a tortilla press until thin and evenly shaped.
6. Heat a nonstick skillet over medium heat. Cook each tortilla for about 2 to 3 minutes on each side, or until lightly golden and easy to flip.

Tip:
These tortillas work beautifully for both sweet and savory fillings. You can make them ahead of time and store them in the fridge for up to 3 days.
