Homemade Healthy Mayonnaise


Ingredients
• 1 whole egg (at room temperature)
• 1 cup (240 ml) of oil (choose one of these options):
Extra virgin olive oil – for a robust Mediterranean flavor
Avocado oil – mild taste and very healthy
Sunflower oil (cold-pressed) – for a neutral flavor
• ½ teaspoon salt (adjust to taste)
• 1–2 tablespoons fresh lemon juice

Preparation

With an immersion blender (quick method):
1. Place the egg, salt, and lemon juice in a tall jar or blender cup.
2. Add the oil all at once.
3. Place the immersion blender at the bottom and blend for 10–15 seconds without moving it.
4. When the emulsion forms, slowly lift the blender up and down until all the oil is incorporated.

With a hand whisk or regular blender:
1. Place the egg, salt, and lemon juice in the bowl/blender.
2. Start whisking and add the oil very slowly in a thin stream, whisking constantly.
3. Continue until the mixture thickens into creamy mayonnaise.

Notes & Tips
• Store in the refrigerator in a sealed container for 3–4 days.
• For more flavor, add a pinch of mustard, garlic, or herbs.
• If it separates, start again with a fresh egg and slowly add the separated mixture as if it were the oil.
