
Green Plantain Tortillas

Ingredients:
• 2 green plantains (completely green, not ripening or yellowing)
• 1 teaspoon salt
• Water (for boiling only)
• Coconut oil or olive oil (optional, for lightly greasing the pan)

Instructions:
1. Peel the plantains:Â Make a lengthwise cut in the peel and remove it carefully. Cut the plantains into medium-sized chunks.
2. Cook: Place them in a pot with enough water to cover and boil for 15–20 minutes, or until fully tender.
3. Mash:Â Drain and mash the plantains while still hot until you get a thick, smooth dough. Add the salt.
4. Form the tortillas:
• While the dough is still warm, divide it into portions and roll each one into a ball.
• Place each ball between two pieces of parchment paper and press using a tortilla press until thin and evenly shaped.
5. Cook: Heat a nonstick skillet over medium heat. Cook each tortilla for about 2 to 3 minutes per side, or until lightly golden and easy to flip.

Tips for Best Results:
• No flour needed. The natural starch in green plantains acts as a binder when mashed while hot.
• Use very green plantains. If they’re yellowing or ripening, the texture won’t hold.
• Mash while hot. This helps activate the starch and gives the dough elasticity.
• Work with the dough while it’s warm. If it cools too much, it can become crumbly. If that happens, moisten your hands or add a few drops of warm water to soften it.
• Do not add water to the mash. Only use water for boiling. Extra moisture will make the dough too sticky or soft.
