Fresh Cauliflower Rice with Vegetables and Herbs

Ingredients (4 servings):

• 1 medium cauliflower (about 4 cups, grated).
• 1 cup cherry tomatoes, halved.
• 1 cup cucumber, diced small.
• ½ cup red onion, finely chopped.
• ½ cup bell peppers (red, green, or yellow), diced.
• ¼ cup fresh parsley, chopped.
• ¼ cup fresh cilantro, chopped.
• 3 tbsp extra virgin olive oil.
• Juice of 1 large lemon.
• Sea salt to taste.
• Optional: black pepper to taste.

Preparation:
1. Prepare the cauliflower rice:
• Wash and dry the cauliflower thoroughly.
• Grate it with a box grater or pulse in a food processor until it resembles rice grains.
• Transfer to a skillet without oil and sauté over medium heat for 3–4 minutes to reduce moisture (do not brown). Let it cool.

2. Mix the vegetables:
• In a large bowl, combine cherry tomatoes, cucumber, onion, bell peppers, parsley, and cilantro.

3. Combine with cauliflower rice:
• Add the cooled cauliflower rice to the vegetable mixture and toss well.

4. Season:
• Add olive oil, lemon juice, sea salt, and black pepper if desired.
• Mix until everything is well combined and fresh.

Serving suggestion:
• Serve chilled as a refreshing main salad or as a side dish with grilled meats, fish, or sautéed chickpeas.
• Perfect as a detox, low-carb, and antioxidant-rich recipe.
