Coconut Chia Pudding with Berries & Agave
Ingredients (makes 2 large servings)
• 250 g unsweetened coconut milk (you can also use almond or oat milk for a lighter version)
• 3 tablespoons (30 g) chia seeds
• 1 teaspoon pure vanilla extract
• 1 teaspoon agave nectar or natural honey (optional, to taste)
• A pinch of cinnamon or cardamom (optional)
• Fresh berries (blueberries, strawberries, raspberries, or blackberries)
• 1 tablespoon unsweetened shredded coconut or chopped walnuts (for garnish)
Preparation
1️⃣ Base mixture
• In a bowl or glass jar, mix together coconut milk, vanilla extract, agave nectar, and a touch of cinnamon or cardamom if desired.
• Add the chia seeds and stir well to prevent clumping.
• Let it sit for 5 minutes, stir again, and cover the container.
2️⃣ Resting time
• Refrigerate for at least 3 hours, or preferably overnight.
• The chia seeds will absorb the liquid and form a creamy, pudding-like texture.
3️⃣ Serving
• Serve in individual cups or jars.
• Top with a generous layer of fresh berries.
• Sprinkle with shredded coconut or chopped walnuts.
• For a touch of extra sweetness, drizzle a little more agave nectar or natural syrup on top.
