Chickpea Crackers


Ingredients:
• 100 g chickpea flour
• ½ tsp baking powder
• Salt to taste
• 3 tbsp olive oil
• Water as needed (about 40–50 ml)

Yields: about 24 gluten-free crackers
Prep time: 10 min
Baking time: 10–12 min at 350 °F (180 °C)

Preparation:
1. Mix dry ingredients
• In a bowl, combine the chickpea flour, baking powder, and salt.
• Stir well to evenly distribute.
2. Add oil
• Add the olive oil and mix with your hands or a spoon until the mixture looks crumbly.
3. Add water gradually
• Add water one tablespoon at a time, mixing until you get a soft, manageable dough that doesn’t stick too much to your hands.
4. Roll out the dough
• Place the dough between two sheets of parchment paper.
• Roll it out with a rolling pin until very thin (about 2–3 mm for crispy crackers).
5. Cut the crackers
• Remove the top sheet of parchment paper.
• Cut the dough into squares or use cookie cutters.
• Transfer the whole sheet (with the bottom parchment) onto a baking tray.
6. Bake
• Place in a preheated oven at 350 °F (180 °C).
• Bake for 10–12 minutes, until the edges are golden and the crackers crisp up.
7. Cool and serve
• Remove from the oven and let cool on a wire rack.
• The crackers will crisp up even more as they cool.
