Chicken & Broccoli Bites


These savory bites combine tender chicken, fresh broccoli, and melted cheese for a protein-rich snack or appetizer. You can choose to fry them for a crispier finish or bake/air-fry for a lighter version.

Ingredients (makes about 14–16 bites)
• 2 chicken breasts (about 285 g), finely chopped or ground
• 1 cup broccoli, grated or finely chopped (80 g)
• 2 tablespoons mayonnaise or cream cheese
• ½ cup almond flour (57 g)
• ⅓ cup Parmesan cheese, grated (35 g)
• 1 large egg
• ½ teaspoon each garlic powder, oregano, salt, and black pepper (or to taste)
• 1 cup shredded cheese blend (110 g) – half cheddar, half mozzarella

Preparation
1. Prepare the chicken
• Option 1: Finely chop the chicken breasts by hand for a chunkier texture.
• Option 2: Grind or process the chicken for smoother, meatball-style bites.
2. Mix the ingredients
• In a large bowl, combine the chicken, broccoli, mayonnaise or cream cheese, almond flour, Parmesan, egg, and seasonings.
• Fold in the shredded cheddar and mozzarella. Mix until well combined.
3. Shape the bites
• Using your hands or a small scoop, form the mixture into bite-sized balls or patties.
• Place them on a lined baking sheet.

Cooking Options
Air Fryer / Oven (Healthier option):
• Preheat the air fryer or oven to 375°F (190°C).
• Lightly spray the basket or tray with oil.
• Cook for 12–15 minutes, turning halfway, until golden and cooked through.
Pan Fry (Crispier option):
• Heat 2–3 tablespoons of oil in a skillet over medium heat.
• Cook the bites for 3–4 minutes per side until golden brown and the chicken is fully cooked.

Serving Suggestions
• Serve warm with a dipping sauce or pair with a fresh salad for a light meal, or offer as a protein-packed snack or appetizer.
