Avocado & Onion Mayonnaise


Ingredients
• 1 whole egg (at room temperature)
• ¾ cup (180 ml) of oil (choose one for best results):
Light olive oil – Mediterranean flavor, slightly intense
Avocado oil – very healthy and mild
Cold-pressed sunflower oil – neutral base
• ½ teaspoon salt (adjust to taste)
• 1–2 tablespoons fresh lemon juice
• ½ ripe avocado (peeled and pitted)
• 2–3 tablespoons finely chopped onion (white or red, depending on preference)


Preparation

With a blender or immersion blender:
1. Place the egg, salt, lemon juice, and oil in a tall jar or blender.
2. Blend with the immersion blender at the bottom without moving for about 10–15 seconds until it starts to thicken.
3. Once the emulsion forms, add the avocado and onion, and blend until smooth and creamy.
4. Adjust salt and lemon juice to taste.


Notes & Tips
• Store in a sealed jar in the refrigerator and consume within 2–3 days, as avocado oxidizes quickly.
• For a milder flavor, you can use sautéed or lightly roasted onion instead of raw.
• Perfect as a dip, for sandwiches, cold salads, tacos, or as a side for meats and fish.
