Grilled Chicken Breast with Quinoa Salad and Roasted Vegetables

Ingredients:
• 1 boneless, skinless chicken breast
• 1 tablespoon extra virgin olive oil
• 1 teaspoon paprika
• 1 teaspoon garlic powder
• Juice of 1 lemon
• Salt and pepper to taste
• ½ cup cooked quinoa
• 1 carrot, cut into strips
• 1 red bell pepper, cut into strips
• 1 zucchini, sliced
• 1 cup fresh spinach
• ¼ red onion, finely chopped
• 1 tablespoon sunflower seeds or walnuts (optional)

Instructions:
1. Marinate the chicken: In a bowl, mix the olive oil, paprika, garlic powder, lemon juice, salt, and pepper. Place the chicken breast in the mixture and marinate for at least 20-30 minutes in the refrigerator.
2. Roast the vegetables: Preheat the oven to 200°C (400°F). Place the carrots, red bell pepper, and zucchini on a baking sheet, drizzle with a little olive oil, salt, and pepper. Roast the vegetables for 20-25 minutes, or until tender and slightly browned.
3. Cook the chicken breast: Preheat a grill or skillet to medium-high heat. Cook the chicken breast for 6-7 minutes on each side, or until fully cooked and juicy on the inside (the internal temperature should reach 75°C or 165°F).
4. Prepare the salad: In a large bowl, combine the cooked quinoa, fresh spinach, red onion, and roasted vegetables. Toss well.
5. Serve: Place the quinoa and vegetable salad on a plate. Slice the chicken breast and place it on top of the salad. If desired, sprinkle sunflower seeds or walnuts for a crunchy touch.
